Mornings can be hectic, but that doesn’t mean you have to skip breakfast! These breakfast burritos are the perfect solution for busy days -- make them fresh in the morning or prep them before for a quick, satisfying start to your day. Just pop one in the microwave for 30 seconds, and you're out the door with a satisfying start to your day!
How To Make The Burrito
Start by placing frozen diced potatoes with onion and pepper in a microwave-safe bowl, tossing them with a little oil, salt, and pepper. Cover the bowl with plastic wrap, poke a small hole for ventilation, and microwave until the potatoes are tender, stirring halfway through. Meanwhile, whisk eggs with a splash of milk, salt, and pepper in another microwave-safe bowl. Microwave in short intervals, stirring in between, until the eggs are fully cooked and fluffy.
To assemble, lay out tortillas and layer the eggs, cooked potatoes, shredded cheese, and salsa down the center. For extra flavor, add sliced avocado, hot sauce, or any preferred toppings. Wrap the burrito by folding up the bottom, then folding in the sides, and rolling it tightly to seal.
These burritos can be enjoyed immediately or stored for later—wrap them up and refrigerate or freeze them for a quick meal anytime. To reheat, simply microwave until warm. Feel free to customize the ingredients to suit your taste—swap potatoes for beans, cheddar for pepper jack, or salsa for guacamole.

Ingredients (Makes 2 burritos)
¾ cup of frozen diced potatoes, onions and peppers
1 tbsp canola oil or butter
4 eggs
2 tbsp milk
¼ tsp salt
¼ tsp ground black pepper
½ cup shredded cheese (cheddar, pepper jack, or your choice)
¼ cup salsa (or diced tomatoes)
½ avocado, sliced
2 large tortillas
Instructions
Place frozen diced potatoes in a microwave-safe bowl
Add oil, salt, and pepper, then toss to coat
Cover the bowl with plastic wrap and poke a small hole in the center
Microwave on high until the potatoes are tender, stirring halfway through
Whisk eggs with a splash of milk, salt, and pepper in another microwave-safe bowl
Microwave the eggs in 30-second intervals, stirring in between, until fully cooked and fluffy
Lay tortillas flat and evenly distribute the eggs, cooked potatoes, shredded cheese, and salsa down the center
Add any extra toppings like avocado or hot sauce if desired
Fold up the bottom of the tortilla, then fold in the sides, and roll tightly to seal
Enjoy immediately or wrap and store in the fridge or freeze
